Coq au porc with onion sauce and sautéed vegetables

Ingredients

Coq au porc

  • 4

    Dalisa coqs au porc

  • 1 tablespoon

    or extra virgin olive oil

  • Salt and pepper to taste

Onion gravy

  • 1 tablespoon

    of butter

  • 1/2

    Spanish onion

  • 1 1/4 cups

    demi-glace sauce

  • Pepper to taste

Sautéed vegetables

  • 2 cups

    of parsnips in julienne

  • 2 cups

    of carrots in julienne

  • 1

    green pepper in julienne

  • 1/2

    big red onion

  • 1 tablespoon

    of olive oil

  • Salt and pepper to taste

Preparation

Coq au porc

  1. Preheat oven to 375 °F.
  2. Salt and pepper the coq au porc. In a non-stick skillet, heat the oil over medium-high heat and sear the meat for 1 minute on each side.
  3. Place the coq au porc in a Pyrex dish. Bake in the oven for 20-30 minutes.

Onion gravy

  1. In a non-stick skillet, melt butter over high heat and cook onion for 8 minutes.
  2. In a saucepan, combine onion and sauce. Using a hand blender, reduce the preparation to a smooth sauce. Add pepper.

Sautéed vegetables

  1. In a large non-stick skillet, heat oil over high heat and cook vegetables for 5 minutes. Salt and pepper.
