Coq au porc with onion sauce and sautéed vegetables

or extra virgin olive oil

Salt and pepper to taste
Onion gravy

of butter

Spanish onion

1 1/4 cups
demi-glace sauce

Pepper to taste
Sautéed vegetables

2 cups
of parsnips in julienne

2 cups
of carrots in julienne

green pepper in julienne

big red onion

1 tablespoon
of olive oil

Preparation
Coq au porc
- Preheat oven to 375 °F.
- Salt and pepper the coq au porc. In a non-stick skillet, heat the oil over medium-high heat and sear the meat for 1 minute on each side.
- Place the coq au porc in a Pyrex dish. Bake in the oven for 20-30 minutes.
Onion gravy
- In a non-stick skillet, melt butter over high heat and cook onion for 8 minutes.
- In a saucepan, combine onion and sauce. Using a hand blender, reduce the preparation to a smooth sauce. Add pepper.
Sautéed vegetables
- In a large non-stick skillet, heat oil over high heat and cook vegetables for 5 minutes. Salt and pepper.
