Couscous and Sausage Salad

Ingredients

  • 1 pound

    of butternut squash, peeled and cut into 1-inch dice

  • 1

    package of Dalisa sausages (mild or hot Italian)

  • 1 1/2 cup

    of couscous

  • 1 cup

    of cherry tomatoes

  • 1 cup

    of arugula

  • 3 tbsp

    of fresh parsley

  • 3 tbsp

    of fresh mint

  • 2 tbsp

    of lemon juice

  • 3 tsp

    of olive oil

Preparation

  1. Preheat the oven to 425°F. Cover a baking sheet with parchment paper and place the squash cubes on it. Pour 1 tsp. of olive oil on the squash and bake for 10 minutes.
  2. After 10 minutes of cooking, set the oven to 375°F. On a 2nd baking sheet covered with aluminum foil, place the sausages. Cook the sausages and squash for 15 minutes. Turn the sausages twice during cooking. Once cooked, slice the sausages. Reserve.
  3. Cook the couscous according to the method on the package.
  4. Meanwhile, slice the tomatoes and herbs.
  5. Combine all the ingredients in a large bowl. Season to taste.
