Couscous and Sausage Salad

Ingredients

1 pound
of butternut squash, peeled and cut into 1-inch dice

1
package of Dalisa sausages (mild or hot Italian)

1 1/2 cup
of couscous
-
1 cup
of cherry tomatoes

1 cup
of arugula
-
3 tbsp
of fresh parsley
-
3 tbsp
of fresh mint
-
2 tbsp
of lemon juice

3 tsp
of olive oil
Preparation
- Preheat the oven to 425°F. Cover a baking sheet with parchment paper and place the squash cubes on it. Pour 1 tsp. of olive oil on the squash and bake for 10 minutes.
- After 10 minutes of cooking, set the oven to 375°F. On a 2nd baking sheet covered with aluminum foil, place the sausages. Cook the sausages and squash for 15 minutes. Turn the sausages twice during cooking. Once cooked, slice the sausages. Reserve.
- Cook the couscous according to the method on the package.
- Meanwhile, slice the tomatoes and herbs.
- Combine all the ingredients in a large bowl. Season to taste.
