Dalisa beef tournedos with apple and blue cheese topping

2 tablespoons
of chopped parsley

of olive oil

1 tablespoon
of chopped chives

red onion, finely diced

1/2 cup
of blue cheese

1 tablespoon
of butter
Creamy fennel salad (side)

fennel bulbs, minced

grated carrot
-
1/4 cup
of mayonnaise

1/4 cup
of plain Greek yogurt
-
1/4 cup
of parsley
-
2 tablespoons
of whole grain mustard

2 tablespoons
of cider vinegar

1 tablespoon
of sugar
Preparation
Creamy fennel salad (side)
- Mix all ingredients except the fennel and carrot using a whisk.
- Add the vegetables and coat them with the vinaigrette.
Tournedos and topping
- Sear the tournedos in butter for approximately 1 minute on each side. Bake in 350° oven until desired doneness (approximately 10 minutes for medium).
- Cook the apples and onions in a pan with olive oil until apples are tender, approximately 5 minutes. Add the crumbled blue cheese, parsley and chives and continue cooking for 1 minute to combine flavours.
- Garnish your cooked tournedos with the topping and serve with the creamy fennel salad.
