Dalisa’s Sausage Breakfast Burritos

Ingredients

  • 11/2 cup (125 ml)

    Dalisa sausages (flavor of your choice), diced

  • 4

    eggs

  • 30 ml (2 c. à soupe)

    2 tbsp (30 ml) chopped parsley

  • Salt and pepper to taste

  • 1 tbsp (15 ml)

    of butter

  • 1/2

    red bell pepper, cut into strips

  • 1/2

    yellow bell pepper, cut into strips

  • 1/3 cup (80 ml)

    marinara sauce

  • 2

    sliced green onions

  • 1/2 cup (125 ml)

    mixture of different grated cheeses

  • 2

    large tortillas

  • Olive oil

Preparation

  1. Heat oil in a large cast-iron skillet over medium heat. Add pieces of Sausage Dalisa, and sauté for 8 minutes. Transfer to a bowl.
  2. Whisk the eggs with the parsley in a bowl. Salt and pepper.
  3. In a skillet, melt the butter over medium heat. Pour in the beaten eggs and cook for 2 to 3 minutes, until the eggs are set.
  4. Add peppers with marinara sauce.
  5. Add the Dalisa sausage dice and sauté for a minute.
  6. Spread the eggs, peppers, green onions, cheese, and Dalisa sausage pieces on the tortillas. Roll up the tortillas tightly. Secure with a toothpick.
  7. Serve the burritos with hash browns.
