Ham and Maple Sausage Breakfast Bowls

Ingredients

  • 1

    package (375 g) Dalisa Ham and Maple sausages

  • 680g

    baby potatoes, halved

  • 200 g

    Halloumi cheese

  • 2

    avocados, thinly sliced

  • 250 g

    cherry tomatoes

  • Chopped chives to taste

  • Chopped green onions to taste

  • Hot pepper flakes to taste

  • 4

    eggs

  • Spinach

  • Kalamata black olives, pitted

  • Butter

  • Olive oil

  • Salt and pepper

Preparation

  1. Boil the potatoes for about 10 minutes. Drain, season with salt and pepper, then add the green onions and hot pepper flakes to taste. Place on a baking sheet and bake at 190 °C (375 °F) for 15 minutes.
  2. Bake the sausages at the same time as the potatoes, for the same amount of time, turning them halfway. Once removed from the oven, cut the sausages into rounds and set aside.
  3. Over medium heat, brown the Halloumi cheese in a skillet with a drizzle of olive oil.
  4. In the same skillet over low heat, wilt the spinach in a bit of olive oil and butter. Season with salt and pepper to taste.
  5. While the spinach heats up, prepare the garnish. Cut the tomatoes, olives, avocados, green onions and chives.
  6. Poach the eggs in water and vinegar.
  7. Divide all ingredients into the bowls and place an egg on top of each one. Garnish with chives and green onions. Season with salt and pepper and serve with toast.
