Ham & Maple sausage, apples, and maple sauce crepe

Ingredients

Pancakes (about 8 to 10 pancakes)

  • 2

    cups flour

  • 3

    cups milk

  • 3

    eggs

  • 1 tsp

    vanilla extract

  • ¼ tsp

    baking powder

  • 1 tbsp

    brown sugar

  • A pinch of salt

  • Butter for cooking

Fillings

  • 1 packet (375g)

    of Dalisa Ham & Maple sausages

  • 4

    Cortland apples, diced

  • ½ cup

    maple syrup

  • 2 tbsp

    dark rum

  • 1

    pinch of salt

Maple sauce (1 cup)

  • ½ cup

    of maple syrup

  • 1 tsp

    cornstarch

  • ⅓ cup

    35% cream

Preparation

  1. Preheat oven to 375oF. Place parchment paper on a baking sheet. Add sausages and bake for 15 minutes. Flip halfway through cooking.
  2. In a large bowl, combine flour, eggs, milk, baking powder, vanilla extract, brown sugar and salt. Mix until just combined.
  3. Add butter to a non-stick pan and pour some pancake preparation. After about 30 seconds, check that the edges come off easily, then flip the pancake. Continue cooking for 30 seconds. Repeat with the rest of the mixture.
  4. In a saucepan, add the apples, maple syrup, and salt and simmer for 10 minutes. When the apples are tender, add rum and cook for another minute. Set aside.
  5. Before putting on the stove, combine maple syrup, cream, and cornstarch in a small saucepan. Stir constantly and bring to a boil. Simmer for about 30 seconds and remove from heat.
  6. In a pancake, place one Ham & Maple sausage and spread a generous portion of apples. Cover with maple sauce. Fold the pancake and garnish with pieces of apples, sausages and sauce.
