Hearty Hot Italian Sausage Soup

Ingredients

  • 1

    package Dalisa hot Italian sausages

  • 3 tbsp

    olive oil

  • 1

    onion, chopped

  • 2

    carrots, diced

  • 3

    celery stalks, diced

  • 1

    clove garlic, chopped

  • ¼ cup

    fresh parsley, chopped + ¼ cup for garnish

  • 2 tsp

    dried thyme

  • 2 tsp

    dried oregano

  • ¼ tsp

    hot pepper flakes

  • 5

    cups chicken broth

  • 1

    can diced tomatoes

  • 1

    can navy beans, rinsed and drained

  • 1

    potato, diced

  • Salt and pepper to taste

Preparation

  1. In a large pot, heat olive oil over medium heat and sauté the sausage pieces for five minutes. Add the onions, carrots and celery and continue cooking for two minutes.
  2. Add the garlic, parsley, thyme, oregano and hot pepper flakes and cook for one more minute.
  3. Add the tomatoes, navy beans, diced potato, broth, salt and pepper, and bring to a boil. Reduce heat to low and continue cooking for 10 minutes.
  4. Adjust seasoning as needed and garnish with remaining parsley..
