Italian Sausage Manicotti

  • 6 Dalisa Italian sausages (hot or mild)
  • 8 manicotti, uncooked
  • 1 small onion, chopped
  • 2 garlic clove, minced
  • 1 can of crushed tomatoes (540 ml)
  • 1 tsp of tomato paste
  • 1 tsp of fresh oregano
  • 1 1/2 cup of grated mozzarella
  • 2 tsp of fresh basil
  • 1/2 cup of grated Parmesan
  • 2 eggs


  1. Cook manicotti according to package directions for al dente cooking. Set aside.
  2. In a large skillet, cook the sausage meat with onion and garlic.
  3. When the meat is cooked, stir in the crushed tomatoes, tomato paste, basil and oregano. Cook until boiling, then lower the heat and simmer, covered, for 30 minutes.
  4. In a large bowl, combine the cheeses and eggs. Stuff the manicotti with this preparation.
  5. In a large ovenproof dish, spread half of the sausage sauce.
  6. Place the manicotti in the dish, then cover with the other half of the sauce.
  7. Bake in a preheated oven at 350°F for about 30 minutes.
  8. Serve with ward bread and a green salad.
