Italian Sausage, Peppers, and Hollandaise Casserole

Ingredients

  • 1

    package of Dalisa Mild Italian sausages (375g)

  • 4-5

    potatoes, cubed (3 to 4 cups)

  • 1/2

    red bell pepper, chopped

  • 1/2

    green bell pepper, chopped

  • 1

    yellow onion, chopped

  • 2

    garlic cloves, chopped

  • 1 tsp

    dried thyme

  • 1 tsp

    dried rosemary

  • 1/2 tsp

    paprika

  • Salt and pepper to taste

  • 1

    package of store-bought hollandaise sauce (1 cup)

  • 4

    eggs

  • 1

    cup Havarti cheese

Preparation

  1. Preheat the oven to 375°F (190°C). Place the sausages on a baking sheet and cook them for 8 to 10 minutes until they are almost completely cooked, turning them halfway through.
  2. In a preheated skillet over medium-high heat with a drizzle of olive oil, add the potatoes, bell peppers, onion, and garlic. Sauté until the potatoes are golden brown.
  3. Cut the sausages into quarters and add them to the skillet with the vegetables.
  4. Grate the cheese and prepare the hollandaise sauce according to the package instructions.
  5. In a baking dish, pour the vegetable and sausage mixture, then add one-third of the hollandaise sauce.
  6. In the same skillet used earlier, cook the eggs (scrambled or sunny-side up). Once cooked, distribute them over the dish.
  7. Add the second third of the hollandaise sauce and cover with the grated cheese. Bake everything in the oven for 15 to 20 minutes, then a few minutes under the broiler to brown the cheese.
  8. When serving, add a bit of hollandaise sauce to the dish.
