red bell pepper, chopped

package of store-bought hollandaise sauce (1 cup)

Preparation
- Preheat the oven to 375°F (190°C). Place the sausages on a baking sheet and cook them for 8 to 10 minutes until they are almost completely cooked, turning them halfway through.
- In a preheated skillet over medium-high heat with a drizzle of olive oil, add the potatoes, bell peppers, onion, and garlic. Sauté until the potatoes are golden brown.
- Cut the sausages into quarters and add them to the skillet with the vegetables.
- Grate the cheese and prepare the hollandaise sauce according to the package instructions.
- In a baking dish, pour the vegetable and sausage mixture, then add one-third of the hollandaise sauce.
- In the same skillet used earlier, cook the eggs (scrambled or sunny-side up). Once cooked, distribute them over the dish.
- Add the second third of the hollandaise sauce and cover with the grated cheese. Bake everything in the oven for 15 to 20 minutes, then a few minutes under the broiler to brown the cheese.
- When serving, add a bit of hollandaise sauce to the dish.
