Kale and Sausage Soup

Ingredients

1 tbsp
of olive oil

Hot Italian Dalisa sausages, sliced

carrots, diced

2
celery stalks, diced

1
onion, diced
-
2
plum tomatoes, diced

2
zucchinis, sliced
-
2
springs of fresh thyme
-
1
can of white beans, rinsed and drained

4 cups
of chicken broth
-
2 cups
of chopped kale
Preparation
- In a large saucepan, heat the olive oil over medium heat. Add the sausage slices and cook for about 10 minutes.
- Add the carrots, celery and onion and continue cooking for 5 minutes, stirring occasionally.
- Add the tomatoes, zucchini and fresh thyme. Cook for 5 minutes.
- Add white beans and chicken broth. Bring to a boil, lower the heat and simmer for 20 minutes.
- Add kale and continue cooking for 5 to 15 minutes.
