Kale and Sausage Soup

Ingredients

  • 1 tbsp

    of olive oil

  • 6

    Hot Italian Dalisa sausages, sliced

  • 2

    carrots, diced

  • 2

    celery stalks, diced

  • 1

    onion, diced

  • 2

    plum tomatoes, diced

  • 2

    zucchinis, sliced

  • 2

    springs of fresh thyme

  • 1

    can of white beans, rinsed and drained

  • 4 cups

    of chicken broth

  • 2 cups

    of chopped kale

Preparation

  1. In a large saucepan, heat the olive oil over medium heat. Add the sausage slices and cook for about 10 minutes.
  2. Add the carrots, celery and onion and continue cooking for 5 minutes, stirring occasionally.
  3. Add the tomatoes, zucchini and fresh thyme. Cook for 5 minutes.
  4. Add white beans and chicken broth. Bring to a boil, lower the heat and simmer for 20 minutes.
  5. Add kale and continue cooking for 5 to 15 minutes.
