Lentil and Coq au porc Soup

Ingredients

onions, finely chopped

garlic cloves, finely chopped

carrots cut into small pieces

celery stalks, thinly sliced

zucchini, cut into pieces

½ cup
of rice

10 cups
of chicken broth
-
1
can of lentils
-
2 cups
of frozen chopped spinach
-
Parsley to taste

Salt and pepper to taste

Olive oil
Preparation
- Heat the olive oil in the pot over medium-high heat.
- Add the onions, garlic, carrots, and celery. Season with salt and pepper to taste. Cover and continue cooking, stirring regularly for about 5 minutes.
- Add the rice and mix well with the vegetables and olive oil.
- Add the chicken broth and the Coq au porc. Bring to a boil.
- Reduce heat to low, add the pieces of zucchini, spinach, parsley, and lentils. Simmer for 15 minutes.
- Remove the pieces of chicken, pork and bacon and cut into small pieces. Return everything to the pot.
- Season to taste.
