(450g) Dalisa hot Italian sausages

tomatoes, cut into wedges

mini cucumbers, thinly sliced

2
nectarines, diced
-
1
garlic clove, minced

¼
red onion, thinly sliced

¼ cup
boiling water
-
2 tbsp.
white wine vinegar

1 tbsp.
honey
-
¼ cup
olive oil

Fresh basil, to taste

100g to 125g
fresh mozzarella

Store-bought (or homemade) croutons

Salt and pepper
Preparation
- In a bowl, combine the onion, boiling water, ¼ cup vinegar and honey. Add a good pinch of salt. Let stand while preparing the other ingredients.
- Preheat the oven to 375°F. Place parchment paper on a baking sheet. Add the sausages and bake for 15 minutes. Flip halfway through cooking.
- For the vinaigrette, combine the olive oil, 2 tbsp. tablespoon vinegar, honey and garlic clove.
- In a bowl, place the tomatoes, cucumbers, onions, nectarines and croutons. Add the dressing and mix well.
- Just before serving, add the sliced sausage and pieces of fresh mozzarella. Garnish with basil, salt and pepper.
