Penne with Olive and Sausage

Ingredients

Dalisa Italian sausages (Hot or Mild)

onion, chopped

yellow bell pepper, cut into strips

green bell pepper, cut into strips

garlic cloves, minced

1/2 cup
of pitted olives, sliced

1 tbsp
of dried oregano

Salt and pepper

1/4 cup
of Parmesan

1 cup
of cooking water
-
4 cups
of penne
Preparation
- In a large skillet, heat olive oil over medium heat. Remove the membrane from the sausages and cook the flesh, breaking it up with a wooden spoon, for about 5 minutes.
- Add the onion and peppers. Cook for 3 minutes. Lower the heat and add the garlic, olives and spices. Cook over low heat for 5 minutes.
- Meanwhile, cook the pasta in a large pot of salted boiling water. Drain and keep 1 cup of cooking water.
- Add 1/4 cup of cooking water to the sausage mixture. Add the Parmesan and mix well. Add more water and spices as needed.
- Add the penne into the sauce, mix well and serve.
