Piri-piri Beef Tournedos

Ingredients

Beef

  • 4

    garlic cloves, chopped

  • 1/2 cup

    of white wine

  • 1 tsp

    of olive oil

  • 2 tbsp

    of homemade (see recipe below) or store-bought piri-piri sauce

Sides

  • Sweet potato fries (homemade or store-bought)

  • Kale

  • Mesclun

  • Radish

  • Fresh cilantro

  • Hard-boiled eggs

Piri-piri sauce (3/4 cup)

  • 1/3 cup

    of olive oil

  • 3

    limes for the juice

  • 1/4 cup

    of vinegar

  • 1 tbsp

    of cayenne pepper

  • 2

    garlic cloves, minced

  • 1 tbsp

    of paprika

  • 1 tbsp

    of chili flakes OR 1 chopped jalapeño

Preparation

  1. In an ovenproof skillet, sear the beef tournedos 2 minutes on each side. Transfer to a plate.
  2. In the same pan, cook garlic for 1 minute. Add the piri-piri sauce, then deglaze with white wine. Let reduce by half.
  3. Return the beef tournedos to the pan and bake at 375 ° between 6 and 12 minutes, depending on the desired doneness.
  4. In a deep fryer or in the oven, cook the sweet potato fries according to the method prescribed on the package.
  5. While cooking, prepare the salad by chopping kale and radishes. On each plate, add mesclun and garnish with slices of radish, kale, fresh cilantro and egg wedges.
  6. Add a portion of fries and a beef tournedos on each plate. Pour the sauce on the plates and serve immediately.

Piri-piri sauce

  1. Mix all the ingredients for the sauce. Let sit all night before using.
