of chili flakes OR 1 chopped jalapeño
Preparation
- In an ovenproof skillet, sear the beef tournedos 2 minutes on each side. Transfer to a plate.
- In the same pan, cook garlic for 1 minute. Add the piri-piri sauce, then deglaze with white wine. Let reduce by half.
- Return the beef tournedos to the pan and bake at 375 ° between 6 and 12 minutes, depending on the desired doneness.
- In a deep fryer or in the oven, cook the sweet potato fries according to the method prescribed on the package.
- While cooking, prepare the salad by chopping kale and radishes. On each plate, add mesclun and garnish with slices of radish, kale, fresh cilantro and egg wedges.
- Add a portion of fries and a beef tournedos on each plate. Pour the sauce on the plates and serve immediately.
Piri-piri sauce
- Mix all the ingredients for the sauce. Let sit all night before using.
