Portuguese Chicken and Rice

Ingredients

3 tbsp
of olive oil

chicken thighs (with or without skin)

chopped onion

garlic cloves, minced

1 cup
of white wine

1 can (540 ml)
of diced tomatoes (original seasoning)

1 tbsp
of honey
-
2 tbsp (or less)
of crushed peppers (medium-hot)

2 cups
of chicken broth

1 cup
of long grain rice

Dalisa chorizo sausages

Fresh oregano, chopped

Fresh cilantro, chopped

Salt and pepper
Preparation
- In a large saucepan, heat the olive oil.
- Over medium-high heat, sear the chicken thighs for a few minutes. Reserve.
- Over medium heat, brown the onion and garlic for 4 minutes. Deglaze with white wine.
- Add the canned tomatoes, honey, crushed pepper and chicken broth. Bring to a boil.
- Add the rice, sausages and chicken. Reduce the heat and simmer for 20 minutes or until the rice is ready.
- Add fresh herbs, season with salt and pepper and continue cooking for 2 minutes.
