Portuguese Chicken and Rice

Ingredients

  • 3 tbsp

    of olive oil

  • 4

    chicken thighs (with or without skin)

  • 1

    chopped onion

  • 2

    garlic cloves, minced

  • 1 cup

    of white wine

  • 1 can (540 ml)

    of diced tomatoes (original seasoning)

  • 1 tbsp

    of honey

  • 2 tbsp (or less)

    of crushed peppers (medium-hot)

  • 2 cups

    of chicken broth

  • 1 cup

    of long grain rice

  • 3

    Dalisa chorizo sausages

  • Fresh oregano, chopped

  • Fresh cilantro, chopped

  • Salt and pepper

Preparation

  1. In a large saucepan, heat the olive oil.
  2. Over medium-high heat, sear the chicken thighs for a few minutes. Reserve.
  3. Over medium heat, brown the onion and garlic for 4 minutes. Deglaze with white wine.
  4. Add the canned tomatoes, honey, crushed pepper and chicken broth. Bring to a boil.
  5. Add the rice, sausages and chicken. Reduce the heat and simmer for 20 minutes or until the rice is ready.
  6. Add fresh herbs, season with salt and pepper and continue cooking for 2 minutes.
