Poutine with Bacon and Sausages

Ingredients

  • 1 package

    of Dalisa TAPAS sausages (Bacon & Cheddar flavour)

  • Store-bought fries

  • 1 package

    of bacon

  • Cheese curds

Sauce

  • 1 tbsp

    of grey shallots, minced

  • 2

    garlic cloves

  • 3 tbsp

    of sugar

  • 5 tbsp

    of balsamic vinegar

  • 1 tsp

    of butter

  • 2 cups

    of chicken broth

  • 3 tbsp

    of tomato paste

  • 1 pinch

    of cayenne pepper

  • 2

    cloves

  • 1 tbsp

    of cumin

  • 2

    bay leaves

  • 3 tbsp

    of cornstarch

  • 1/2 cup

    of cold water

Preparation

  1. Preheat the oven to 375°F and line a baking sheet with foil.
  2. Cut the bacon in half lengthwise. Wrap each tapas sausage with bacon and hold in place with a toothpick. Repeat until all the sausages are used up.
  3. Bake for 10 to 20 minutes, or until the bacon is crispy.
  4. In a saucepan over medium heat, combine the sugar, shallots and garlic and allow everything to melt until a caramel forms. Deglaze with balsamic vinegar, add butter and let reduce by half.
  5. Add chicken broth, tomato paste and spices. Season with salt and pepper. Simmer for about 5 minutes.
  6. Dissolve the cornstarch in cold water and add it to the sauce while whisking.
  7. Cook the fries in the oven according to the method prescribed on the package.
  8. Place a portion of fries in the bottom of a bowl or plate, add sausage and cheese curds. Cover with sauce and enjoy!
