Sausage and Mushroom Spaghettini

Ingredients

of olive oil

Dalisa sausages (hot or mild Italian)

small onion, chopped

170 g
of portobello mushrooms, sliced

2x 227 g
of Paris mushrooms, sliced

1 can (540 ml)
of diced tomatoes

1/4 cup
of tomato paste
-
1/4 cup
of fresh parsley, chopped

2 tsp
of red wine vinegar
-
3/4 pound
of spaghettini
Preparation
- In a saucepan, heat oil over medium heat. Slice the sausages and cook them for about 13 minutes.
- Add the onion and cook for 2 more minutes.
- Add the mushrooms, cover and cook for 15 minutes.
- Add the canned tomatoes and the tomato paste. Cover and let thicken for about 10 minutes.
- Add the parsley and wine vinegar. Simmer for 5 minutes.
- At the same time, cook the spaghettini according to the method prescribed on the package. Drain and mix with the sauce.
- Serve with shavings of the cheese of your choice and a green salad.
