Sausage and Mushroom Spaghettini

Ingredients

  • 1 tbsp

    of olive oil

  • 4

    Dalisa sausages (hot or mild Italian)

  • 1

    small onion, chopped

  • 170 g

    of portobello mushrooms, sliced

  • 2x 227 g

    of Paris mushrooms, sliced

  • 1 can (540 ml)

    of diced tomatoes

  • 1/4 cup

    of tomato paste

  • 1/4 cup

    of fresh parsley, chopped

  • 2 tsp

    of red wine vinegar

  • 3/4 pound

    of spaghettini

Preparation

  1. In a saucepan, heat oil over medium heat. Slice the sausages and cook them for about 13 minutes.
  2. Add the onion and cook for 2 more minutes.
  3. Add the mushrooms, cover and cook for 15 minutes.
  4. Add the canned tomatoes and the tomato paste. Cover and let thicken for about 10 minutes.
  5. Add the parsley and wine vinegar. Simmer for 5 minutes.
  6. At the same time, cook the spaghettini according to the method prescribed on the package. Drain and mix with the sauce.
  7. Serve with shavings of the cheese of your choice and a green salad.
