Sausage and Quinoa Stuffed Peppers

Ingredients

  • 1 package

    of Dalisa sausages of your choice (450g)

  • 4

    large yellow or red bell peppers

  • 2 cups

    of cooked quinoa

  • 3

    large onions

  • 2

    green shallots

  • 4

    garlic cloves, peeled

  • Olive oil

  • Provence herbs, salt and pepper

Preparation

  1. Preheat the oven to 350°F.
  2. In a large pan, cook the sausages in olive oil. Meanwhile, peel and dice the onion.
  3. Once cooked, remove the sausages from the pan and add the onion. Cook for 3 minutes.
  4. In a food processor, add the sausage meat, the cooked quinoa, the onion, the garlic cloves and the shallots. Add Provence herbs, salt and pepper to taste. Mix well.
  5. Cut the peppers in 2. Remove the seeds and the white membrane. Place the pepper halves in a shallow baking dish.
  6. Fill each pepper halves with the stuffing. Pour 1/2 cup of water at the bottom of the dish and bake for 30 minutes.
  7. The peppers are done when their flesh is tender and well roasted.
