Sausage, Corn and Spinach Casserole

Ingredients

Dalisa sausages (flavour of your choice)

1.5 pound
of red potatoes

1 tbsp
of olive oil

1
onion (chopped)

3
garlic cloves (minced)

1/4 tsp
of crushed hot pepper

1 cup
of frozen corn
-
1 1/4 cup
of vegetable broth
-
2 cups
of fresh baby spinach

Salt and pepper
Preparation
- Cook the sausages in the oven at 375°F for 15 minutes. Let cool and slice.
- Meanwhile, slice the potatoes into 5 millimetres thick pieces.
- In a saucepan, heat the olive oil to medium heat. Sauté the sausages and onions for 3 minutes.
- Add garlic and crushed hot pepper and cook for 1 minute.
- Add the potatoes, corn and broth. Cover and simmer for about 15 minutes, or until the potatoes are tender.
- Add spinach and let cook for 2 minutes. Season with salt and pepper.
