Sausage, Corn and Spinach Casserole

Ingredients

  • 6

    Dalisa sausages (flavour of your choice)

  • 1.5 pound

    of red potatoes

  • 1 tbsp

    of olive oil

  • 1

    onion (chopped)

  • 3

    garlic cloves (minced)

  • 1/4 tsp

    of crushed hot pepper

  • 1 cup

    of frozen corn

  • 1 1/4 cup

    of vegetable broth

  • 2 cups

    of fresh baby spinach

  • Salt and pepper

Preparation

  1. Cook the sausages in the oven at 375°F for 15 minutes. Let cool and slice.
  2. Meanwhile, slice the potatoes into 5 millimetres thick pieces.
  3. In a saucepan, heat the olive oil to medium heat. Sauté the sausages and onions for 3 minutes.
  4. Add garlic and crushed hot pepper and cook for 1 minute.
  5. Add the potatoes, corn and broth. Cover and simmer for about 15 minutes, or until the potatoes are tender.
  6. Add spinach and let cook for 2 minutes. Season with salt and pepper.
