Spinach and Sausage sauce for pasta

Ingredients

Dalisa Italian sausage (hot or mild)

10 slices
of prosciutto

1
onion, diced

2 cans
of whole tomatoes (56 oz)

4
garlic cloves

2 cups
of spinach, chopped

2 tbsp
of tomato paste
-
1 tsp
of sugar
-
2 tsp
of Italian seasoning
-
1 tsp
of salt

1/4 tsp
of pepper
-
1/4 tsp
of hot pepper flakes
Preparation
- In a large pot, heat olive oil over medium heat.
- Add the sausages, prosciutto and onion and cook for about 7 minutes. Using a wooden spoon, break the sausages and prosciutto into pieces.
- Add the tomato paste and garlic. Mix and cook for 1 minute.
- Add the canned whole tomatoes. Using a spoon, mash the tomatoes. Bring to a boil.
- Add the spices and spinach and continue cooking over low heat for about 15 minutes, stirring occasionally.
- Serve over pasta or in lasagna.
