Spinach and Sausage sauce for pasta

Ingredients

  • 6

    Dalisa Italian sausage (hot or mild)

  • 10 slices

    of prosciutto

  • 1

    onion, diced

  • 2 cans

    of whole tomatoes (56 oz)

  • 4

    garlic cloves

  • 2 cups

    of spinach, chopped

  • 2 tbsp

    of tomato paste

  • 1 tsp

    of sugar

  • 2 tsp

    of Italian seasoning

  • 1 tsp

    of salt

  • 1/4 tsp

    of pepper

  • 1/4 tsp

    of hot pepper flakes

Preparation

  1. In a large pot, heat olive oil over medium heat.
  2. Add the sausages, prosciutto and onion and cook for about 7 minutes. Using a wooden spoon, break the sausages and prosciutto into pieces.
  3. Add the tomato paste and garlic. Mix and cook for 1 minute.
  4. Add the canned whole tomatoes. Using a spoon, mash the tomatoes. Bring to a boil.
  5. Add the spices and spinach and continue cooking over low heat for about 15 minutes, stirring occasionally.
  6. Serve over pasta or in lasagna.
