Udon Noodles with Bratwurst and Tamari

Ingredients

Pickled vegetables

  • 1/2

    English cucumber, thinly sliced with a mandolin

  • 1

    small red onion, thinly sliced

  • 30 ml (2 tbsp)

    rice vinegar

  • 10 ml (2 tsp)

    maple syrup

Sausages and noodles

  • 1

    package (450 g) Dalisa Bratwurst

  • 1

    red onion, chopped

  • 15 ml (1 tbsp)

    vegetable oil

  • 5 ml (1 tsp)

    ground coriander

  • 2.5 ml (1/2 tsp)

    crushed hot pepper flakes

  • 2.5 ml (1/2 tsp)

    ground black pepper

  • 4

    200-g packages of fresh udon noodles

  • 75 ml (1/3 cup)

    tamari sauce

  • 45 ml (3 tbsp)

    maple syrup

  • 15 ml (1 tbsp)

    toasted sesame seeds

Preparation

Pickled vegetables

  1. In a bowl, mix all the ingredients and let marinate for 10 minutes. Drain.

Sausages and noodles

  1. Meanwhile, in a large non-stick skillet over medium-high heat, cook onion and sausage in oil, breaking up with a wooden spoon, until sausage is browned. Add spices and continue cooking for 1 minute while stirring. Set aside in a warm place.
  2. In a pot of boiling water, cook noodles until tender (around 3 to 4 minutes). Drain.
  3. Add noodles, tamari sauce and maple syrup to the sausage in the pan. Stir to coat the noodles with the sauce.
  4. Divide into bowls and top with pickled vegetables and sesame seeds.
