Zucchini, Walnut and Sausage Rolls

Ingredients

  • 4

    Dalisa Mexican sausages

  • 3

    zucchinis

  • 2 cups

    of fresh parsley

  • 2

    garlic cloves

  • 2/3 cup

    of walnuts

  • 5 tsp

    of fresh Parmesan cheese

  • Arugula

  • 1

    red bell pepper, diced

Preparation

  1. Boil the sausages for 10 minutes and cut into thin slices.
  2. Using a sharp peeler, cut zucchini horizontally into 2 mm thick slices. Place the zucchini slices in a saucepan with a steam basket. Steam over low heat for 1 to 2 minutes or until zucchini has slightly softened (zucchini slices will soften further on cooling).
  3. In the food processor, combine parsley, garlic, walnuts and 3 tsp of Parmesan cheese. Season with salt and mix until the mixture has the consistency of a smooth puree. If you don’t have a food processor, you can finely chop the ingredient with a knife. Add some olive oil if the texture doesn’t hold together. Spread zucchini slices on a work surface.
  4. Place 1 teaspoon (5 ml) full of nuts puree on each slice and spread well. Add 2 or 3 sausages slices. Roll zucchini slices starting with the short side, then tie with toothpicks.
  5. Place the zucchini rolls side by side in a shallow baking dish. Sprinkle with remaining Parmesan cheese. (You can prepare the rolls until this step and cover with plastic wrap and store in the refrigerator overnight.) Bake in preheated oven at 425 ° F (220 ° C) for about 5 minutes or until the rolls are hot. Serve immediately.
  6. Serve with arugula and red bell pepper for the perfect Christmas appetizer !
