Breakfast Casserole with Sausage

Ingredients

Bacon & Cheddar Dalisa sausages

of butter

1/4 cup
of finely chopped red onion

1/3 cup
of finely diced red bell pepper

1 cup
of breakfast potatoes (homemade or store-bought) thawed

Hollandaise sauce (homemade or store-bought)

of grated cheddar cheese

egg yolks

2 tbsp
of cold water

1/2 cup
of salted butter at room temperature (in cubes)

Salt and pepper

1 tbsp
of lemon juice
Preparation
- In an oven preheated to 375°F, cook the sausages for 12 minutes. Turn them halfway through cooking. Let cool and slice into 1 cm thick piece.
- In a large skillet, melt the butter over medium heat. Add the onion and pepper and cook for 3 minutes. Add the sausage rings and cook for 2 more minutes.
- In 1 medium dish or in 2 small ovenproof dishes, divide the breakfast potatoes. Add the sausage mixture and the desired amount of hollandaise sauce. Top with cheddar cheese.
- Bake at 375°F for 5 to 10 minutes.
- Meanwhile, cook 1 or 2 eggs per person. Place the eggs on top of the casserole.
Hollandaise Sauce
- In a large stainless or glass bowl, whisk the egg yolks with 2 tbsp of cold water.
- Place the container on a double boiler filled with very hot (but not boiling) water. Whisk until the mixture is thickened a bit and has a foamy texture.
- Add the small cubes of butter one by one while continuing to whisk.
- Season with salt and pepper, stir in the lemon juice. Whisk 10 seconds then serve immediately.
