Breakfast Casserole with Sausage

Ingredients

  • 3

    Bacon & Cheddar Dalisa sausages

  • 1 tsp

    of butter

  • 1/4 cup

    of finely chopped red onion

  • 1/3 cup

    of finely diced red bell pepper

  • 1 cup

    of breakfast potatoes (homemade or store-bought) thawed

  • Hollandaise sauce (homemade or store-bought)

  • 1/2 cup

    of grated cheddar cheese

  • 2 to 4

    eggs

Hollandaise Sauce

  • 3

    egg yolks

  • 2 tbsp

    of cold water

  • 1/2 cup

    of salted butter at room temperature (in cubes)

  • Salt and pepper

  • 1 tbsp

    of lemon juice

Preparation

  1. In an oven preheated to 375°F, cook the sausages for 12 minutes. Turn them halfway through cooking. Let cool and slice into 1 cm thick piece.
  2. In a large skillet, melt the butter over medium heat. Add the onion and pepper and cook for 3 minutes. Add the sausage rings and cook for 2 more minutes.
  3. In 1 medium dish or in 2 small ovenproof dishes, divide the breakfast potatoes. Add the sausage mixture and the desired amount of hollandaise sauce. Top with cheddar cheese.
  4. Bake at 375°F for 5 to 10 minutes.
  5. Meanwhile, cook 1 or 2 eggs per person. Place the eggs on top of the casserole.

Hollandaise Sauce

  1. In a large stainless or glass bowl, whisk the egg yolks with 2 tbsp of cold water.
  2. Place the container on a double boiler filled with very hot (but not boiling) water. Whisk until the mixture is thickened a bit and has a foamy texture.
  3. Add the small cubes of butter one by one while continuing to whisk.
  4. Season with salt and pepper, stir in the lemon juice. Whisk 10 seconds then serve immediately.
