Pork tenderloin with salsa

Ingredients

  • 1

    pork tenderloin

  • 1/2 cup

    of dried cranberries finely diced

  • 1/2 cup

    of dried apricots finely diced

  • 1/3 cup

    of crushed roasted almonds

  • 1/2 teaspoon

    of Sambal Oelek

  • 3 tablespoons

    of honey

  • 1/4 cup

    of olive oil

  • 1 tablespoon

    of chopped fresh chives

  • 1 teaspoon

    of rice vinegar

  • 1/4 cup

    of finely diced celery

  • 1 pinch

    of salt and pepper

  • 1 tablespoon

    of butter

Preparation

  1. Preheat the oven to 400°F.
  2. Season the pork tenderloin and color each sides in an oven safe skillet with melted butter. Put the pork in the oven for about 20 or 25 minutes or when its internal temperature registers 140°F to 145°F.
  3. Mix all of the ingredients together. Let the salsa stand for about 20 minutes at room temperature. Serve.
