Beef Tournedos with Cranberry and Peppercorn Sauce

Ingredients

Dalisa beef tournedos

2 tbsp
of butter

2 tbsp
of 5-color peppercorns
-
1 cup
of fresh cranberries

1/2 cup
of red wine vinegar
-
2 tbsp
of beef bouillon concentrate (Bovril type)

2 tbsp
of cornstarch
-
2 cups
of water

Preparation
- In an ovenproof skillet, melt the butter over medium-high heat. Sear the tournedos for 2 minutes on each side. Reserve on a plate.
- In the same skillet over medium heat, add the peppercorns, cranberries, red wine vinegar and beef concentrate. Simmer for 3 minutes.
- In a small bowl, combine the cornstarch in the water. Add to the pan, mix well and let thicken for 2 minutes.
- Return the beef tournedos to the pan and bake in the oven at 375°F for about 15 minutes for rare cooking.
- Serve with mashed potatoes and sautéed green beans.
