Beef Tournedos with Brandy and Peppercorn Sauce

Ingredients

of mixed peppercorns

of olive oil

clove of garlic

french shallot

1 cup
of white wine

1/4 cup
of Brandy

1 1/4 cup
of demi-glace sauce

1/2 cup
of 35% cooking cream

of butter
Preparation
Sauce
- Crush half the peppercorns with a mortar.
- In a saucepan, add oil, garlic and shallot and cook for 2 minutes. Add white wine and peppercorn. Reduce to medium-high heat. The liquid should evaporate almost completely.
- Add Brandy and flambé.
- Add the demi-glace and a pinch of salt. Simmer for about 7 minutes. Stir from time to time.
- Add the cream to the saucepan and mix well. Keep warm.
Beef tournedos
- For best results, take the beef tournedos out of the fridge and let sit for 30 minutes before cooking.
- In an oven-safe skillet, heat the butter. Add tournedos and sear on each side for about 2 minutes or until golden brown. Sear the bacon.
- In a preheated oven to 375°F, continue cooking the tournedos until desired doneness.
