Beef Tournedos with Brandy and Peppercorn Sauce

Ingredients

  • 1 tbsp

    of mixed peppercorns

  • 1 tbsp

    of olive oil

  • 1

    clove of garlic

  • 1

    french shallot

  • 1 cup

    of white wine

  • 1/4 cup

    of Brandy

  • 1 1/4 cup

    of demi-glace sauce

  • 1/2 cup

    of 35% cooking cream

  • 4

    Dalisa beef tournedos

  • 1 tbsp

    of butter

Preparation

Sauce

  1. Crush half the peppercorns with a mortar.
  2. In a saucepan, add oil, garlic and shallot and cook for 2 minutes. Add white wine and peppercorn. Reduce to medium-high heat. The liquid should evaporate almost completely.
  3. Add Brandy and flambé.
  4. Add the demi-glace and a pinch of salt. Simmer for about 7 minutes. Stir from time to time.
  5. Add the cream to the saucepan and mix well. Keep warm.

Beef tournedos

  1. For best results, take the beef tournedos out of the fridge and let sit for 30 minutes before cooking.
  2. In an oven-safe skillet, heat the butter. Add tournedos and sear on each side for about 2 minutes or until golden brown. Sear the bacon.
  3. In a preheated oven to 375°F, continue cooking the tournedos until desired doneness.
