Braised Toulouse Sausages with vegetables

Ingredients

  • 6

    Toulouse Dalisa sausages

  • 1/2 cup

    of dry red wine

  • 4

    garlic cloves

  • 2 tsp

    of herbs of Provence

  • 3

    celery stalks

  • 3

    carrots

  • 1

    red onion

  • 6 slices

    of bacon

  • 1 cup

    of chicken broth

  • 1 can

    of 796 ml of diced tomatoes

  • 3 tbsp

    of tomato paste

Preparation

  1. Preheat the oven to 350°F. Chop the vegetables.
  2. In a Dutch oven pot, heat the oil and grill the sausages on each side over medium heat for 7 minutes. Reserve.
  3. In the same pot, brown the bacon for 3 minutes. Sweat the onions, carrots, celery, herbs and garlic for another 5 minutes.
  4. Add salt and pepper to taste. Deglaze with red wine, reduce for 1 to 2 minutes. Add the chicken broth, reduce for 3 minutes. Stir in the diced tomatoes and tomato paste. Mix gently.
  5. Add the sausages, cover and bake in the oven for 90 minutes. Serve on pasta with butter and fine herbs.
