Preparation
- Remove bacon from tournedos, chop it and set aside.
- Cut beef into thin slices.
- Julienne green pepper, mince onion and finely slice mushrooms.
- In a large non-stick skillet over high heat, cook bacon.
- Add green pepper, onion and mushrooms.
- If necessary, add a little bit of oil. Add steak spice and season with pepper.
- Set aside vegetable mixture in a bowl.
Assembly
- Slice open baguettes, spread with a thin layer of mayonnaise and place flat, crust side up, in the same large skillet. Grill one at a time. Set aside on a plate.
- In the same pan over high heat, add a little bit of oil and quickly cook about 8 to 10 slices of beef, turning them halfway through cooking.
- Place a portion of the vegetable mixture and a few slices of provolone cheese on top of the beef.
- When the cheese has melted, place the bread on top of the cheese. Using a spatula, flip the sandwich onto serving plate.
- Repeat steps 2, 3 and 4 to assemble each sandwich.
