Dalisa Ham & Maple Sausages

red onion, finely chopped

1/2 cup
of brown sugar

1/2 cup
of liquid coffee
-
2 tbsp
of maple syrup
-
2 tbsp
of balsamic vinegar
-
1 tbsp
of Meaux Mustard
-
1 tbsp
of garlic, minced
-
1/2 tsp
of cayenne pepper
Preparation
- In a large skillet, cook the sausages for 12 to 15 minutes, turning them often. Remove the fat from the pan.
- Slice the sausages very thinly.
- In the same pan, add the onions and cook for 5 minutes. Add the garlic and continue cooking for 1 minute.
- Deglaze with balsamic vinegar.
- Add the brown sugar, coffee, maple syrup, mustard and pieces of sausage.
- Reduce and simmer 1 to 2 hours or until the mixture becomes like jelly.
- Add the cayenne pepper.
- Keeps up to 4 weeks in the refrigerator in an airtight container.
