2 tablespoons
of soy sauce

2 tablespoons
of brown sugar

garlic cloves

1 tablespoon
of ground cumin

1 tablespoon
of curry powder

1/2 teaspoon
of Sambal Oelek

1/2 tablespoon
of sesame oil

Fresh mint,
for presentation

Fresh coriander,

Rice

1 1/2 cup
of coconut milk
-
3/4 cup
of long grain rice
Preparation
- In a large bowl, mix all the ingredients except coqs au porc and fresh herbs. Mix well. Add coqs au porc and marinate for at least 1 hour.
- Preheat the oven to 350. In an oven-safe skillet, heat oil and sear the coqs au porc on each side. Transfer the skillet to the oven and cook for about 15 minutes.
- In a saucepan, bring coconut milk to a boil. Add rice and mix well. Reduce heat, cover and let simmer for 15 minutes, or until the coconut milk is absorbed.
- Serve with freshly chopped mint and coriander.
