Indonesian Coq au porc

Ingredients

  • 4

    Dalisa Coq au Porc

  • 2 tablespoons

    of soy sauce

  • 2 tablespoons

    of brown sugar

  • 2

    garlic cloves

  • 1 tablespoon

    of ground cumin

  • 1 tablespoon

    of curry powder

  • 1/2 teaspoon

    of Sambal Oelek

  • 1/2 tablespoon

    of sesame oil

  • Fresh mint,

    for presentation

  • Fresh coriander,

    for presentation

Rice

  • 1 1/2 cup

    of coconut milk

  • 3/4 cup

    of long grain rice

Preparation

  1. In a large bowl, mix all the ingredients except coqs au porc and fresh herbs. Mix well. Add coqs au porc and marinate for at least 1 hour.
  2. Preheat the oven to 350. In an oven-safe skillet, heat oil and sear the coqs au porc on each side. Transfer the skillet to the oven and cook for about 15 minutes.
  3. In a saucepan, bring coconut milk to a boil. Add rice and mix well. Reduce heat, cover and let simmer for 15 minutes, or until the coconut milk is absorbed.
  4. Serve with freshly chopped mint and coriander.
