Pea soup with Dalisa sausage

Ingredients

  • 375 g

    Dalisa ham and maple sausages

  • 4

    slices bacon

  • 1

    clove garlic

  • 1

    yellow onion

  • 2-4

    carrots

  • 60 ml (¼ cup)

    maple syrup

  • 250 ml (1 cup)

    split peas

  • 1 l (4 cups)

    chicken broth

  • 30 ml (2 tbsp.)

    vegetable oil

  • 1

    bay leaf

  • 250–500 ml (1–2 cups)

    water

  • Salt and pepper

Preparation

  1. Peel and dice carrots into medium-sized pieces.
  2. Finely chop onion and mince garlic.
  3. Remove and dispose of sausage casing.
  4. In a skillet over high heat, heat oil and brown sausage meat.
  5. Add bacon.
  6. Once sausage meat and bacon brown, add vegetables, salt to taste and cook for 3 to 5 minutes.
  7. Add split peas, bay leaf, maple syrup, chicken broth and 1 cup of water. Loosen cooking juices with a wooden spoon.
  8. Cover and simmer over low heat for 60 minutes.
  9. Add water as needed to adjust to desired consistency.
