Rice Pilaf

Ingredients

1 cup
of long grain white rice

chopped onion

2 tbsp
of butter

1 3/4 cup
of chicken broth (or vegetable broth for a vegetarian version)

Salt and pepper
Preparation
- In a saucepan, heat the butter. Add the chopped onion and cook for 1 minute while stirring. Season and add the rice. Cook over medium heat for about 4 minutes, stirring often.
- Add the broth. Bring to a boil, cover and cook over low heat for 18 minutes. At the end of cooking, the liquid should be completely absorbed.
- Remove from heat, mix well and cover again for 5 minutes. Season as needed.
- This is the base of a rice pilaf, you can add additional vegetables or spices according to your taste.
