Portuguese Coq Au Porc

Ingredients

    Dalisa Coqs au Porc

  • 450g

    of Dalisa Chorizo sausage

  • 2 cans

    of white beans

  • 3

    Italian tomatoes

  • 3

    garlic cloves

  • 1/2

    cup of dry white wine

  • Fresh mint, chopped

  • Fresh cilantro, chopped

Preparation

  1. Preheat the oven to 375 °. Cook the sausages for 15 minutes, turning them halfway through cooking. Let cool and dice.
  2. In a large ovenproof skillet, heat oil over high heat. Sear the Coqs au Porc for 2 minutes on each side. Reserve on a plate.
  3. Dice the tomatoes and peel the garlic.
  4. In the same skillet over medium heat, cook the tomatoes and garlic for 3 minutes.
  5. Add the drained white beans and the sausage. Mix well. Deglaze with white wine and let reduce by half.
  6. Return the Coqs au Porc in the pan, sprinkle with fresh herbs and bake for 20 minutes at 375 ° or until the chicken has lost its pink color.
  7. Add more fresh herbs just before serving.
