Tacos with Beef Tournedos

Pickled onion

of white vinegar
Herb sauce

small bunch of finely chopped cilantro

small bunch of finely chopped oregano

small hot pepper finely chopped (seeds removed)

of cumin

Olive oil to taste

Salt and pepper

avocado, finely diced

1/3 cup
of ricotta

2 limes
(zest and juice)
Preparation
- Preheat the oven to 400°F.
- Remove the beef tournedos from their individual packaging and pat them dry with a paper towel to absorb the moisture.
- Coat tournedos with chili powder.
- Heat an ovenproof pan over medium-high heat. Heat 1 tbsp of olive oil. Sear the tournedos for 2 minutes on each side. The chili powder will turn black, this is normal. Bake for 5 to 10 minutes in the oven. Remove from the oven and cover with foil for 5 to 10 minutes.
- Meanwhile, dice the onion and place in a small container. Cover with vinegar and let marinate. This step can be done several hours in advance.
- In a bowl, combine all the ingredients for the herb sauce. Add 1 tbsp olive oil at a time for a pesto-style texture. Reserve.
- Brush the corn tortillas with a little olive oil. Heat the tortillas in a skillet until lightly browned.
- Cut the beef into thin slices. Top tortillas with beef, pickled onion, herb sauce, diced avocado, ricotta, lime juice and zest.
