Tacos with Beef Tournedos

Ingredients

  • 4

    Dalisa beef tournedos

  • 2 tbsp

    of chili powder

  • 1 tbsp + 1 tbsp

    of olive oil

  • 8

    corn tortillas

Pickled onion

  • 1

    red onion

  • 1/2 cup

    of white vinegar

Herb sauce

  • 1

    small bunch of finely chopped cilantro

  • 1

    small bunch of finely chopped oregano

  • 1

    small hot pepper finely chopped (seeds removed)

  • 1 tbsp

    of cumin

  • Olive oil to taste

  • Salt and pepper

Toppings

  • 1

    avocado, finely diced

  • 1/3 cup

    of ricotta

  • 2 limes

    (zest and juice)

Preparation

  1. Preheat the oven to 400°F.
  2. Remove the beef tournedos from their individual packaging and pat them dry with a paper towel to absorb the moisture.
  3. Coat tournedos with chili powder.
  4. Heat an ovenproof pan over medium-high heat. Heat 1 tbsp of olive oil. Sear the tournedos for 2 minutes on each side. The chili powder will turn black, this is normal. Bake for 5 to 10 minutes in the oven. Remove from the oven and cover with foil for 5 to 10 minutes.
  5. Meanwhile, dice the onion and place in a small container. Cover with vinegar and let marinate. This step can be done several hours in advance.
  6. In a bowl, combine all the ingredients for the herb sauce. Add 1 tbsp olive oil at a time for a pesto-style texture. Reserve.
  7. Brush the corn tortillas with a little olive oil. Heat the tortillas in a skillet until lightly browned.
  8. Cut the beef into thin slices. Top tortillas with beef, pickled onion, herb sauce, diced avocado, ricotta, lime juice and zest.
