Tex-Mex Casserole with Chorizo Sausage

Ingredients

  • 1

    package (450 g) Dalisa Chorizo sausages

  • 375 ml (1 1/2 cups)

    homemade or store-bought tomato salsa

  • 60 ml (1/4 cup)

    tomato paste

  • 15 ml (1 tbsp)

    chili powder

  • 1

    540-ml can (19 oz) black beans, rinsed and drained

  • 375 ml (1 1/2 cups)

    corn

  • 60 ml (1/4 cup)

    chopped red bell pepper

  • 60 ml (1/4 cup)

    chopped green onions

  • 375 ml (1 1/2 cups)

    shredded Tex-Mex cheese blend

  • Olive oil

  • Coriander

  • Sour cream

  • Nacho chips

Preparation

  1. Preheat oven to 400°F.
  2. Pre-bake the sausages for 12 minutes.
  3. Grill corn in olive oil until golden, add bell pepper, then remove from heat.
  4. Cut the sausages into pieces and add them to the pan.
  5. Pour in the salsa, beans, tomato paste and chili powder and mix well.
  6. Garnish with grated cheese and green onions.
  7. Cover with aluminum foil and bake for 10 to 12 minutes.
  8. Remove foil and broil for about 2 minutes.
  9. Remove from the oven, add the coriander and serve with the nachos and sour cream.
