Tortellini and Sausage Soup

Ingredients

  • 1 tsp

    of olive oil

  • 6

    Dalisa Italian sausages (hot or mild Italian)

  • 1

    small onion, diced

  • 1

    garlic clove, chopped

  • 2 cans of 398 ml

    of crushed tomatoes

  • 1 liter

    of vegetable broth

  • 2 tbsp

    of fresh basil, chopped

  • 1/2 tsp

    of crushed chili pepper

  • Salt and pepper

  • 350 g

    of cheese tortellini

  • 1 1/2 cups

    of fresh spinach, chopped

  • Grated parmesan

Preparation

  1. In a large saucepan, heat oil over medium heat. Add the onion and sausages. Using a wooden spatula, break up the sausages into small pieces. Cook for about 10 minutes, stirring a few times.
  2. Add garlic and cook for 1 minute.
  3. Add the crushed tomatoes, vegetable broth, basil, crushed chili, salt and pepper. Bring to a boil. Reduce heat and simmer for 25 minutes.
  4. Add the tortellini and cook according to the cooking time on the package.
  5. Add the spinach, stirring for 1 minute
  6. Serve with grated parmesan.
