Tortellini and Sausage Soup

Ingredients

of olive oil

Dalisa Italian sausages (hot or mild Italian)

small onion, diced

1
garlic clove, chopped

2 cans of 398 ml
of crushed tomatoes

1 liter
of vegetable broth
-
2 tbsp
of fresh basil, chopped

1/2 tsp
of crushed chili pepper

Salt and pepper
-
350 g
of cheese tortellini
-
1 1/2 cups
of fresh spinach, chopped

Grated parmesan
Preparation
- In a large saucepan, heat oil over medium heat. Add the onion and sausages. Using a wooden spatula, break up the sausages into small pieces. Cook for about 10 minutes, stirring a few times.
- Add garlic and cook for 1 minute.
- Add the crushed tomatoes, vegetable broth, basil, crushed chili, salt and pepper. Bring to a boil. Reduce heat and simmer for 25 minutes.
- Add the tortellini and cook according to the cooking time on the package.
- Add the spinach, stirring for 1 minute
- Serve with grated parmesan.
