Vietnamese fried rice

Ingredients

  • 4

    Dalisa sausages of your choice

  • 2 cups

    of cooked rice

  • 1

    small daikon (or 1/2 of a large)

  • 2

    medium carrots

  • 1

    fennel

  • 2 tbsp

    of soy sauce (to taste)

  • 2

    green onions

  • 1

    lime in wedges

  • Chopped cilantro to taste

Preparation

  1. In an oven preheated to 375°, cook sausages for 15 to 20 minutes, turning them once. Let cool then cut into slices.
  2. Cut the daikon and carrots into small cubes. Chop the green onion and fennel.
  3. In a large skillet, cook the daikon, carrots and fennel for about 5 minutes.
  4. Add the sausages and soy sauce. Mix well and cook for 2 minutes.
  5. Add the cooked rice and adjust the amount of soy sauce if necessary.
  6. Serve in a bowl with chopped cilantro, green onion and a dash of lime juice.
