Zucchini Pasta with Tomato and Sausage Sauce

Ingredients

  • 1 tbsp

    of olive oil

  • 1

    onion

  • 2

    garlic cloves

  • 450 g

    of Dalisa Italian sausage (hot or mild)

  • 2

    tomatoes

  • 1

    carrot

  • 1 tsp

    of vegetable broth concentrate (powder)

  • 1 can

    of tomato paste

  • 1 tsp

    of dried thyme

  • Salt and pepper
  • 3

    small zucchini

  • Parmesan cheese

Preparation

  1. Mince garlic and onion. Core tomatoes and dice them. Chop the carrot.
  2. Heat olive oil in a large pan and cook the onion and garlic for 2 minutes. Add the sausage meat and continue cooking for 5 minutes, stirring regularly to break up the meat.
  3. Add the tomatoes and carrot, vegetable broth powder, tomato paste and thyme. Add 1/4 cup of hot water and simmer over low heat, covered, for about 30 minutes. Adjust seasoning with salt and pepper.
  4. Meanwhile, rinse the zucchini. Using a vegetable peeler or mandolin, cut the zucchini into thin strips like tagliatelle.
  5. A few minutes before the sauce is ready, boil a pot of water. Steam the zucchini strips for about 2 to 3 minutes.
  6. Divide the tagliatelle on a plate, add the sauce then sprinkle with Parmesan cheese.
