Zucchini Pasta with Tomato and Sausage Sauce

Ingredients

of Dalisa Italian sausage (hot or mild)

of vegetable broth concentrate (powder)

of tomato paste

of dried thyme
- Salt and pepper

Preparation
- Mince garlic and onion. Core tomatoes and dice them. Chop the carrot.
- Heat olive oil in a large pan and cook the onion and garlic for 2 minutes. Add the sausage meat and continue cooking for 5 minutes, stirring regularly to break up the meat.
- Add the tomatoes and carrot, vegetable broth powder, tomato paste and thyme. Add 1/4 cup of hot water and simmer over low heat, covered, for about 30 minutes. Adjust seasoning with salt and pepper.
- Meanwhile, rinse the zucchini. Using a vegetable peeler or mandolin, cut the zucchini into thin strips like tagliatelle.
- A few minutes before the sauce is ready, boil a pot of water. Steam the zucchini strips for about 2 to 3 minutes.
- Divide the tagliatelle on a plate, add the sauce then sprinkle with Parmesan cheese.
